Tomato nu shaak

Ingredients

- 1/2 tsp Cumin Seeds

- Pinch of Mustard Seeds

- 1-2 Chopped Green chillies

- 6-8 Tomatoes, chopped into inch-size pieces

- 1 tbsp of Ground Cumin and Coriander powder

- 1/2-1 tsp Red Chilli Powder (based on how spicy you’d like it)

- 1/2 tsp Ground Black Pepper

- 1 tsp Sugar

- 1/2 tsp Salt (adjust based on your preference)

- 3 tbsp Oil of your choice

- handful of chopped coriander

Preparation

1. In a pan, heat up the oil.


2. Once hot, add the cumin seeds and mustard seeds, leaving them to slightly brown and pop in the oil, this should be about 2 minutes.


3. Add the chopped tomatoes and chillies to the oil - be careful as they will splatter as they hit the oil!


4. Now add all the spices and salt and sugar and let the tomatoes really cook. You want to start seeing the oil come to the surface. Leave for about 20 minutes, really letting the tomatoes tender up as they soak up the spices.  


4. Adjust the salt and sugar, and take off the heat. Top with the chopped coriander (if you like!)

Serve hot with rotli (chapatti), rice or in a wrap! Enjoy!
