Ingredients
2 cups of Pasta of your choice, we used Penne
4 to 5 medium sized tomatoes, sliced in half
Half of a red capsicum pepper
3 cloves of garlic
1 large red chilli
1 teaspoon Dried Parsley
Half teaspoon oregano
Half teaspoon ground black pepper
2 to 3 sprigs of fresh oregano
5 to 6 leaves Fresh basil, sliced
Salt to taste
6 tablespoons of Olive Oil
Preparation
1. Boil the pasta and add boiling water, along with a pinch of salt and teaspoon of olive oil.
2. Once the Pasta is boiled, remove the pasta from the water and save a cup of the water. We will need it to add to the tomato sauce later on, as the starch in the pasta will make it thicker.
2. On a griddle, add two tablespoons of olive oil, and put the heat on medium. Add the sliced tomatoes, sliced red peppers, garlic and red chilli.
3. Allow each side of the vegetables to roast and char, rotating them so that both sides are charred and cook until soft. This will take around 10 minutes.
4. Once both sides are well charred, turn off the heat. Add a spoonful of the pasta water to the pan, so it will lift off some of the roasted vegetable juices and flavours.
5. In a blender, add the roasted vegetables and the juice from the pan. Blend until smooth.
6. If you want to make a smooth pasta sauce, you can sieve the blended mixture to remove the seeds and any outer skin from the tomatoes and peppers. If you don’t mind the bits, you can skip this step.
7. Place a pan on medium heat and add 2 tablespoons of Olive Oil, pinch of black pepper and a pinch of dried parsley leaves.
8. Add the roasted vegetable mixture and stir.
9. Add salt, dried parsley, oregano, black pepper and the peri peri chilli powder and give the pan a good stir. Make sure to taste and adjust the herbs.
10. Let the sauce cook for a further 5 to 6 minutes, as the vegetables were already roasted, we don’t need to cook the sauce for too long.
11. Add the pasta to the sauce. And let it cook for a few minutes.
11. Add a spoonful of olive oil and turn off the heat. Your pasta is now ready to serve - simply finish with a garnish of fresh basil.
You can also add cheese if you like! Enjoy while still hot.
