Ingredients
- 800 grams Baby/New Potatoes, washed
- 5 tbsp oil of your choice, we used sunflower
- 1 tbsp paprika
- 1 tsp chilli powder (more if you want it a bit spicy)
- 1/2 tsp sea salt
Preparation
1. Preheat the oven to 180 degrees celsius.
2. Add the oil to a heavy-based pan and allow it to heat up. Keep an eye on it, and once it is warm but not hot, add the chilli powder and paprika powder.
3. Let them sizzle in the oil, stirring gently for 3-4 minutes.
4. Add the potatoes. Let them cook, continuously stirring on a low flame. Once the potatoes start to soften up, add the salt and stir. Keep on a low flame for a further 10 minutes.
5. Remove from the flame and place the potatoes onto a baking tray or dish and spread out. Place in a preheated oven and let them cook until fully crispy on the outside. This should be between 20-25mins, but check with a knife and leave them to cook a little longer if need be.
6. Remove and enjoy as a side dish, or with naan and salad.
